INEZ — Farm 2 Filet opened Friday in Martin County, offering fresh cuts of grass-fed beef, pork, bison and elk and giving customers an opportunity to support local farmers.
Courtney Kirk Maynard and her stepmother Regina Kirk own and operate the new meat shop located 5.7 miles north of Inez on Old Route 3 at 11 Little Lick Road.
“We do beef – steak, roast, ribs, ground beef — and we have pork cuts like bacon, sausage, ribs and Boston butt,” Maynard said. “As we go, there will be some weeks that we have more cuts – certain cuts like a T-bone. We don’t have T-bone this week, but we could have it next week. … Whatever is in higher demand, we will work on getting.”
The Kirks are an agricultural family. Regina and her husband John Kirk, Maynard’s father, raise beef and pork on their farm.
“All beef will come from locally sourced cattle,” said Maynard. “Whether it’s from my dad and stepmom’s farm, their neighbor’s farm or other local farms, all beef and pork in the shop came from within a 10-15-mile radius.”
Elk and bison are also farm-raised.
“The elk came from the western United States and the bison from Wisconsin,” said Maynard. “We hope to offer other wild game and exotic meats.”
